A Healthy Snack, Apple and Orange Muffins

Want to add more fiber to your diet? Here is a healthy snack I have during the day. It will help you keep up your energy levels especially if you spend most of your time on the run.

Healthy Orange and Apple Muffins/Loaf Recipe

Ingredients

  • 1 ½ cups oat bran
  • ½ cup wholemeal flour
  • ¼ cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon cinnamon
  • 1 cup skim milk
  • 1 egg
  • rind of 1 orange
  • ¾ of juice of 1 orange
  • 2 peeled and diced apples

Combine all dry ingredients in a large bowl. Combine milk, egg, orange rind and orange juice in another bowl and mix. Pour the liquid mixture into the dry ingredients and mix until moistened. Stir in apples. Spoon into greased muffin pan or loaf pan. Bake in 400F or 200C for 20-25 mins or until brown. Makes 12 muffins.

Note: The sugar can be replaced by 2 tablespoons of honey.
